I've noticed that I've been stress eating this week. I have serious financial worries and other stuff happening. Interesting that I don't choose veggies, fruit, and healthy stuff. I choose chips, candy, and I stop exercising!! I know better and do the wrong thing anyway.

Today I had a medical procedure, this reminds me of how important good healthy food is to our lives. I hope we all stay away from the bad stuff. It is not worth it. Maybe just once in a while, but not alot. Good eating to us all!

OMG you guys!!! Now I am sooooo hungry. I just got home and did not even have dinner today. I can not wait to try those dishes! Thanks for posting. YUM!

Pineapple-Mango Shrimp

Mix yourself a drink w/ Irish Whiskey and Pineapple-Mango Tropicana Juice.

Watch Celtic Thunder on PBS.

Put 2 tbsp of Olive oil in a small cast iron frying pan (med. heat)
Let get real hot while you watch CT, sip your drink
At the same time remove skin from a half cup of fresh Garlic
When you finish your first drink go back to kitchen and throw Garlic into hot skillet
Mix second drink and go back and watch CT
5 minutes later go back and flip Garlic, browning on all sides
Once browned go back and add 12 jumbo shrimp
Cook 5 minutes stirring occasionally.
Turn off heat and let set covered for an additional 5 minutes.

Serve in a colorful plate, return to CT, eat w/ Pineapple-Mango drink

This is my dinner for today.

Ingredients 1.Fillet fish or boiled eggs or both 2.sauce mixer -olive oil, oyster sauce, soy sauce, fish sauce, sugar, chop garlic and chilli, onion How to 1.Steam fish( you can fry fish but I prefer steam cause I avoid fat.) or boil eggs. Then put them on your plate. 2.Put all sauce mixer in the hot pan for until it boil (you can put onion the last so onion will be a little bit crispy, not overcook. If sauce is too dry , pour a little bit of chicken broth or water in the pan. 3.Pour sauce mixer on the top of fish or eggs. 4.Decorate with cucumber, mint or cilantro.

Today I am not feeling so good. I am drinking coffee with hazlenut cream. It reminds me of somebody. Isn't it cool how sometimes a smell or taste of food can remind you of someone. I enjoy my coffee.

Andra is right, strawberries are almost here!!! I saw the baby flowers on my little patch this morning. So so cool! Spring is heavenly!

Masala Lentils

Turn on Ophra and see the first 15 minutes
Go to kitchen
Throw a half pound of lentils into the pot
Add 4 inches of water and turn on high
“ 1 table spoon of Tumeric
“ 1 ½ or more Tbsp of Masala Indian spice (foodmax)
“ 1 ½ tbsp of Knorrs Caldo de pollo
“ ¼ cup dry fried onions
“ 1 Tbsp of Garlic powder
“ any other spices you like
Pour yourself a glass of wine
Go back and watch Ophra (10 min)
Go back to kitchen and turn down heat to simmer
Go back and watch Ophra (20-30 min)
Go and turn heat off, let set covered for 15 minutes)
Serve with second glass of wine, bread and watch local news!

Oh! forget, fry roti with olive oil. It's healthier.
